May I assume that if I purchase a car here in Mexico, that I can drive it to Texas for a week or 2 visit? Is there a maximum length of stay time?

You may visit the US with a Mexican plated vehicle as often as you like. You will probably want to have your insurance agent provide temporary coverage for the US portion of your trip. Only if you were to reside in the US would you have to import your car to the US and register it there; each state's law would apply regarding the length of residency before that would be required.
Lots of Mexicans drive north of the border to shop, visit or vacation. Just be sure you have your Mexican registration up to date. Even cars which don't meet US emissions or other requirements are allowed to visit; they just can't be imported.
